Based on the contact that fruits and vegetables have with the galvanized steel, it's very important to have a smooth, clean coating; inspectors from the Federal Dept. of Agriculture will be inspecting these machines for decades. The coating also needed to be durable, in order to withstand cleaning agents, corrosive acids, and juices produced by the fruits and vegetables.
